Ingredients for making Kheer
To make Kheer, you need the following ingredients:
Rice: 50 to 60 grams (as per your requirement)
Milk: 1 kg (if there is more rice, then increase the quantity of milk)
Sugar: as per taste
Green cardamom: 2-3
Almonds: few (chopped)
Grated coconut: 2-3 tablespoons
Pistachios: 2-3 (unsalted)
Cashews: 2-3 (chopped)
Saffron: a pinch (for taste and colour)
Method of making Kheer
Preparing the Rice:
Firstly, wash the rice 2-3 times with water and then keep it soaked for some time.
Boiling the Milk:
Put some Desi Ghee in a thick bottomed vessel and put 1 kg of milk in it to boil.
Also add half a cup of water to the milk, so that there is no fear of burning of the milk and it does not stick to the bottom.
Adding rice:
When the milk comes to a light boil, add the soaked rice to it.
Let it cook on low flame and keep stirring it in between.
Enhancing the Taste:
To enhance the taste of kheer, mix half a teaspoon of custard powder in lukewarm milk and add it.
Keep stirring the kheer continuously so that it does not burn.
Adding sugar and dry fruits:
When the rice becomes soft and there are no grains left, add sugar and let it cook a little.
After the sugar dissolves, add chopped dry fruits and cardamom powder and mix well.
Uses of Saffron:
Dissolve saffron in a little warm milk and add it to the kheer.
